Cold-Pressed Safflower Oil

In Maharashtra they call me kardi, though long before I was ever an oil, my flame-orange petals were prized as a dye and a humble replacement for saffron. Pressed from the seeds of that same bright flower, I'm light and neutral - much like sunflower oil, but grown across India long before sunflower ever arrived. So mild I'd rather let your spices and vegetables lead, I'm the one for when you want the food to shine, not the oil.
